The Aramasa Colors Ash (also known as Sumi or "Ink") is a premium Junmai-grade sake from the "Colors" series, specifically crafted to showcase the potential of the legendary Kame-no-O rice variety. Known for its complex profile, it is brewed using the traditional Kimoto method in cedar wooden vats (Kioke), resulting in a unique balance of fruitiness and savoury depth.
It offers a taut, restrained initial impression that transitions into a gentle sweetness and savoury umami. Some testers mention hints of smokiness and a mineral-like finish.
Due to its limited production and high demand, this sake is often sold via lottery or drawing tickets rather than direct purchase.
