The Aramasa Private Lab Amaneko (known as the "Flax Cat") is the most experimental and unique offering in the Aramasa lineup. It is distinguished by its use of white koji (shochu koji), which imparts a high concentration of citric acid, resulting in a profile more reminiscent of a crisp white wine than traditional sake.
An uplifting nose of fresh pomelo, kabosu citrus, green apple, and juicy nashi pear, with subtle herbal and cedar notes.
On palate, It is light and taut with a signature grapefruit-like acidity and a gentle umami finish.
