The Aramasa Private Lab Nirukame (often called Nirvana or Niragame) is a "modern-traditional" hybrid. It is a Bodaimoto style sake—an ancient brewing method from the 14th century—reimagined with a low-alcohol profile and light effervescence.
Brewing Method: Bodaimoto, which involves soaking raw rice in water to create a natural lactic acid starter, combined with Kioke (wooden vat) fermentation.
Subtle notes of muscat grapes, lime zest, and white flowers, with a distinct lactic "yogurt" undertone from the Bodaimoto process. Very clean with a crisp acidity that cuts through the sweetness, leaving a refreshing aftertaste.
Niragame is a seasonal release and is famously difficult to find outside of specialty boutiques.
