Kokuryu Shizuku (石九 雫) is one of the most famous and beloved Daiginjos in Japan. Produced by Kokuryu Shuzo in Fukui Prefecture, its name "Shizuku" means "drip," referring to the traditional gravity-drip method used to collect the sake without any mechanical pressing. The nose offers a delicate yet complex array of wild strawberry, crisp apple, and soft floral notes, hinting at the purity of its gravity-drip collection. On the palate, it is lean and silky, delivering a light, dry sweetness that is perfectly balanced by a sophisticated mineral structure. Unlike more opulent sakes, Shizuku excels in its "Kire," or sharp finish, which vanishes effortlessly from the tongue, leaving behind a pristine and refreshing aftertaste.
