The 2020 Salix has similar alcohol to the 2021 but less freshness. It shows notes of dry hay and straw and pungent flavors with a notable stony minerality in the dry finish. It's still a little marked by the oak and finishes a bit dry. It's medium-bodied and has moderate alcohol and ripeness and marked spicy flavors. This time it was 60% Garnacha Blanca and 40% Pedro Ximenez, as the Macabeo was lost to mildew. 1,270 bottles produced. It was bottled in February 2021.
